Yam Nua (Spicy Beef Salad)

Ranking seventh in the top ten list of Thai food loved by foreigners, Yam Nua or spicy beef salad is a mouth-watering dish of the Thais as well.

Ingredients

  • 450 grams of beef tenderloin
  • 2 garlic cloves
  • 6 fresh coriander leaves chopped
  • 1/4 cup of sugar
  • 2 teaspoons of soya sauce
  • 2 teaspoons of lemon juice
  • salt (to taste)
  • some ground black pepper
  • 2 spring onions thinly sliced
  • 6 red chillies thinly sliced
  • 2 tablespoons of vegetable oil

How to cook

  1. Roast the beef until it is medium. Then slice it up.
  2. Mix the garlic cloves, a half amount of chopped coriander, sugar, soya sauce, lime juice, salt and ground black pepper together and pound them into paste.
  3. Warm the oil in a saucepan and stir-fry the paste for 3-4 minutes.
  4. Add the beef, cook for a minute and remove it from heat.
  5. Allow it to cool. When serving, garnish with the spring onions and remains of chopped coriander and the chillies.

Tom Kha Kai (Chicken in Coconut Soup)

Ranking sixth among the ten Thai dishes ordered most often by foreigners, Tom Kha Kai or chicken in coconut soup is not too hard to prepare by yourself.

Ingredients

  • 1 cup of sliced chicken breasts
  • 2 cups of coconut cream
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 1 tablespoon of sliced galanga root
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground pepper
  • 1 teaspoon of chopped coriander leaves
  • 1 tablespoon of crushed green and red chillies

How to cook

  1. Heat the coconut cream in a saucepan.
  2. When it is boiling, add the chicken and the sliced galanga root.
  3. Cover and simmer with low heat until the chicken breasts are cooked and tender.
  4. Season it with salt and pepper.
  5. Remove it from the heat.
  6. Add fish sauce, lime juice and chillies.
  7. Before serving, add chopped coriander leaves.

Kaeng Phet Pet Yang (Roast Duck Curry)

Ranking fifth among the ten Thai dishes ordered most often by foreigners, the dish of Kaeng Phet Pet Yang or roast duck curry is not commonly found in food shops in Thailand but is mostly served in high-class restaurants.

Ingredients of Curry Paste

  • 7 dried chillies
  • 2 tablespoons of sliced shallots
  • 3 tablespoons of chopped garlic
  • 1/2 tablespoon of chopped galanga
  • 2 tablespoons of chopped lemon grass
  • 1 tablespoon of thin slices of kaffir-lime peels
  • 1 tablespoon of chopped coriander roots
  • 1 tablespoon of ground dried coriander seeds
  • 1 teaspoon of ground dried fennel seeds
  • 1 teaspoon of salt
  • 1 teaspoon of shrimp paste
  • Some pepper

How to prepare the curry paste

  1. Pound the dried chillies and salt together.
  2. Then add all the remaining ingredients except the shrimp paste and pound them together until they are well blended.
  3. Add the shrimp paste and blend thoroughly.

Ingredients

  • 1 roast duck, boned and sliced
  • 1 cup of coconut cream
  • 6 cups of thin coconut cream from the second or third pressing
  • 1/2 cup of sweet basil leaves
  • 2 tablespoons of jalapeno pepper
  • 6 sliced leaves of kaffir-lime
  • 20 small tomatoes
  • 1 small pineapple, peeled and cut to small pieces
  • 1/2 chopped bamboo shoots, boiled
  • 2 tablespoons of fish sauce
  • 3 tablespoons of cooking oil

How to cook

  1. Use strong heat to boil the thin coconut cream in a pot. Leave it.
  2. Fry the curry paste in cooking oil in a wok. Then add the roast duck and blend them together.
  3. Remove it from heat and pour it into the pot of cooked coconut cream.
  4. Use medium heat to boil the curry. When it is boiling, add the pineapple, tomatoes and boiled bamboo shoots.
  5. Simmer with medium heat for five minutes.
  6. Add the one-cup coconut cream and gently stir to combine.
  7. Season with fish sauce. Add sweet basil leaves, kaffir-lime leaves and jalapeno pepper.
  8. Remove it from the heat.

For the medicinal properties of Kaeng Phet Pet Yang, different herbs have different functions. Their properties are described below:

Chilli: It is used as cough medicine, and for the respiration system, blood circulation and heart. It can also help stimulate your appetite.

Shallot: It helps relieve a cold and increase the secretion of urine. It is also used as carminative medicine.

Garlic: It can help prevent the blood vessel from being clogged, relieve high blood pressure, and eliminate phlegm.

Galanga: It can help relieve excessive gas in the stomach, stimulate digestion, and cure dysentery.

Lemon grass: It can help increase the secretion of urine, reduce heat in the body, and lower high blood pressure. It also acts as carminative medicine.

Kaffir-lime: It helps relieve excessive gas in the intestine.

Coriander: It acts as carminative and cough medicine.

Sweet basil: It helps eliminate phlegm, and also parasites in the body.

Tomato: It is used as a mild laxative, and can help prevent cancer.

Phat Kaphrao

Phat Kaphrao (Meat or Seafood Fried with Sweet Basils)

Ranking fourth among the ten Thai dishes ordered most frequently by foreigners, Phat Kaphrao can have any kind of meat as its main ingredient. But the Thais populary choose pork or chicken.

The recipe to be presented to you is shrimps fried with sweet basils. You can substitute another type of meat for shrimps as you like.

Ingredients

  • 1 cup of shelled shrimps
  • 3 shallots thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1-3 small chillies, thinly sliced
  • A handful of basil leaves
  • 1 tablespoon of vegetable oil
  • 2 tablespoons of fish sauce
  • 4 tablespoons of hot water
  • Half a lime, squeezed
  • 1 teaspoon of sugar
  • Salt and pepper

How to cook

  1. Heat the oil in a frying-pan.
  2. Stir-fry the shallots and garlics.
  3. Add the chillies, fish sauce and shrimps. Stir for 2 minutes before pouring the hot water, cover and simmer for a few minutes.
  4. Uncover the pan and season with lime juice and sugar.
  5. Stir another 30 seconds before adding the basil leaves.
  6. Flavour with salt and pepper.
  7. Remove from heat and ready to be served with boiled rice.
